Banana Spice Muffins

The holiday season has snuck up on us again!  With Thanksgiving just around the corner, and Christmas not far behind, our minds are full of jumping thoughts concerning dinners, families, what to feed our families, candy, desserts, hot drinks…  But, what about breakfast?  If you’re in the middle of planning your menus for this holiday season, consider adding these Banana Spice Muffins to the mix.  These muffins are moist, have a tender crumb, and they are really easy to make!  Trust me, these muffins won’t take you away from your family, or have you preparing overnight in advance.  One bowl is all you need to make these delicious breakfast muffins!  Now, back to menu planning…

Ingredients:

  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 cups whole-wheat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 stick butter, at room temperature
  • 2/3 cup sugar
  • 3 medium ripe bananas, mashed
  • 2 teaspoons vanilla
  • 1/3 cup coconut or soy milk
Instructions:
  • Line your muffin tins, and set aside.
  • In a small bowl, whisk together the baking powder, baking soda, flour, cinnamon and nutmeg.
  • In the bowl of your mixer, beat the butter and sugar until light and fluffy.
  • Add the mashed bananas, vanilla and milk.  Beat until combined.
  • On low speed, mix in the flour mixture until combined.
  • Beat at medium speed for 1-2 minutes, until batter is smooth.
  • Fill the lined muffin tins with the batter.  Let rest while you preheat the oven to 350 degrees.
  • Once the oven reaches 350, bake the muffins for 20 minutes, or until a toothpick comes out clean from the center.
  • Let cool, and enjoy!
Makes 12 muffins.
