
Gingerbread. It’s one of those Christmasy things I look forward to every holiday season! For some reason, we don’t really think about gingerbread except between Thanksgiving and New Year’s, but it never disappoints. Gingerbread, whether it’s in cookie, cake or cupcake form is so spicy and warm and comforting. The cinnamon, ginger, nutmeg, and cloves in this cupcake are no exception. Paired with the sweet cinnamon-sugar frosting, these cupcakes are a must for your holiday baking this year!
Ingredients:
Cupcakes
- 1 cup milk (soy or whole)
- 1/3 cup oil
- 2 tablespoons honey
- 1-1/2 cups sugar
- 1 teaspoon vanilla extract
- 1-1/2 cups flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons ginger
- 1 tablespoon cinnamon
- 1/4 teaspoon cloves
- 1/4 teaspoon nutmeg
- 1/2 cup butter
- 2 tablespoons milk
- 2 tablespoons cinnamon-sugar non-dairy creamer
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- Preheat oven to 350 degrees.
- In a large bowl, whisk together the soy milk, oil, honey, sugar, and vanilla extract. Add in the flour, baking powder, baking soda, and spices. Whisk until combined.
- Pour the batter into lined cupcake tins.
- Bake at 350 degrees for 20-22 minutes, or until a tester comes out clean from the center of the cupcakes.
- Let cool before frosting.
- In the bowl of your mixer, beat the butter until smooth.
- Add in the soy milk, creamer, and vanilla extract, and beat until combined and smooth.
- Add in the powdered sugar. Beat on medium-high for about 8-10 minutes, until the frosting is light and fluffy.
- Frost the cupcakes, and enjoy!
