Honey Oat Bread

Honey Oat Bread_La Casa de Sweets

My girls absolutely adore honey.  It’s the only sweetener they’re allowed on a daily basis, usually a drop or two stirred into their daily afternoon tea.  They line up with a little spoon and I give them an extra drop to sweeten their little tastebuds.  One day while enjoying their tea, my three year old asked me how come we couldn’t make honey bread.  I told her I couldn’t think of a single reason why we shouldn’t, and so our honey oat bread idea was formulated…

Sweetened with honey and brown sugar, this bread is made extra moist with the addition of melted butter and a few dollops of greek yogurt.  Throw in some oats, and you’ve got a pretty great loaf of sweet bread.  Perfect for afternoon tea!

Honey Oat Bread

Makes 1 loaf

  • 1-1/2 cups flour
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 egg
  • 1 cup brown sugar
  • 1 stick butter, melted and slightly cooled
  • 1/2 cup honey
  • 1/4 cup yogurt (preferably Greek)
  • 3/4 cup oats, divided

  • Preheat the oven to 375°, and grease a loaf pan.
  • In a small bowl, whisk together the flour, baking soda and salt, and set aside.
  • In the bowl of your mixer, beat together the egg and brown sugar on medium-high speed until combined.
  • Slowly drizzle in the melted butter, beating until combined.
  • On low, add the honey and greek yogurt until incorporated.
  • Slowly add in the flour mixture, mixing on low until fully combined.
  • Stir in 1/2 cup of oats.
  • Pour the batter into the greased loaf pan, and sprinkle the remaining oats on top.
  • Bake at 375° for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool completely before enjoying!
