
In the mood for a super-moist, chocolate muffin made with healthy bananas? Then, this is the muffin for you! You’ll get a double dose of chocolate, along with a light banana taste that will leave you craving more. You can even change things up and add white chocolate chips if you want. Enjoy this chocolatey treat!
Ingredients:
- 2 ripe bananas
- 1 large egg, lightly beaten
- 1/2 cup yogurt
- 1/2 stick unsalted butter, melted
- 1 cup sugar
- 1 cup flour
- 1/4 teaspoon baking soda
- Pinch of salt
- 1 cup semi-sweet chocolate chips, melted
- 3/4 cup mini semi-sweet chocolate chips
- 1 teaspoon vanilla extract
Instructions:
Preheat the oven to 375 degrees. Line muffin tins with paper cups, and set aside.
In a medium bowl, mash the bananas with a fork. With a wooden spoon, stir in the egg, yogurt, and melted butter.
In a large bowl, whisk together the sugar, flour, baking soda, and salt.
Pour the banana mixture into the flour mixture, and mix until combined. Stir in the melted chocolate chips, 1/2 cup of the mini chocolate chips, and the vanilla extract.
Fill the lined muffin tins with the batter. Top with the remaining mini chocolate chips.
Bake at 375 degrees for 15-20 minutes, or until the muffins are dry and cracked on top.
Cool slightly before enjoying!
