Brown Butter Banana Bread

Banana bread.  It’s one of those things my hubby still can’t believe I like.  It has something to do with the fact that I absolutely can’t stand eating (or smelling!) bananas.  It’s one of those weird things…I mean, I shouldn’t like banana bread at all…but I love it!  Now, I know you’ve all had banana bread before.  With nuts, without nuts.  Crumb topping, no crumb topping.  I’ve tried adding different ingredients to banana bread, but none of them have really made me go “wow”…until now…  So, what’s so special about this recipe?

Brown butter.  Those two little words will change how you see and taste baking for a long time.  All you do is cook the butter in the saucepan for about 10 minutes, and you get this absolutely amazing smell throughout your home.  It’s incredible.  The taste is nutty and warm and comforting…it’s just delicious. Please believe me, you need brown butter in your kitchen, so make this banana bread today!


Banana Bread:

  • 1 stick unsalted butter
  • 1-1/2 cups flour
  • Pinch of salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1 cup sugar
  • 2 large (or 3 small) ripe bananas, mashed
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
Crumb Topping:
  • 1/4 cup flour
  • 2 tablespoons sugar
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon cinnamon
  • 2 tablespoons unsalted butter, cold

Pre-heat the oven to 350 degrees.  Grease a loaf pan, and set aside.

In a small saucepan, over medium-high heat, cook the butter, stirring occasionally, until it darkens.  (Do not burn it, cook it until it smells nutty.)  Once the butter has browned, remove from the heat, and cool slightly.

While the butter is browning, combine the ingredients for the crumble in a medium bowl.  Use your hands or a fork to mix the butter into the dry ingredients until crumbly, pea-sized crumbs form.  Set aside.

In a medium bowl, whisk together the flour, salt, baking soda, and cinnamon, and set aside.

In the bowl of your mixer, combine the egg and sugar, and mix at medium speed until light and fluffy.

Mix in the brown butter slowly.

Add the mashed bananas, the milk and the vanilla extract, and mix on medium speed until combined.

Mix in the flour mixture until combined.

Pour the batter into the prepared loaf pan.  Sprinkle the crumb topping evenly over the top of the batter.

Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.  Let cool before enjoying!

  • I’ve been very tempted to bake with brown butter. This recipe sounds scrumptious. I will have to give it a try next time I have some extra bananas lying around.

    Love this recipe- have made it 3 x in about 1 month. Hubby loves it too.
    Doubling recipe tonight and making for my inlaws.
    The brown butter and crumb topping also go good with a dollop of vanilla ice cream.

    Have made this before and love it which is why I’m planning to make a loaf right now for my family, BUT….I only have salted butter!! Could I substitute or would it best to sadly put this off until tomorrow when I can get to the store for unsalted butter? 🙂
