Brown Butter & Sage Roasted Potatoes
Serves 3-4 as a side dish
Ingredients:
- 1/4 cup butter, vegan or dairy
- 10-12 dried sage leaves
- 3 lbs baby potatoes, washed and halved
- 3 garlic cloves, minced
- Salt and pepper, to taste
Instructions:
Preheat the oven to 375° and lightly grease a baking sheet.
In a small sauce pan, melt the 1/4 cup butter over low heat, swirling the sauce pan occasionally until the butter turns golden brown and smells nutty. Remove the sauce pan from the heat and stir in the dried sage leaves while you prepare the potatoes.
Use a spatula to toss the potatoes and garlic together on the baking sheet. Sprinkle on some salt and pepper, and toss again. Pour the brown butter and sage over the potatoes, and mix with the spatula until all the potatoes are coated with the butter.
Place the baking sheet in the oven, and bake at 375° for 30 minutes. Stir the potatoes around, and then bake for another 20 minutes until the potatoes are lightly golden brown. Remove from the oven, and let cool slightly before serving.
