We make ice cream here at La Casa de Sweets about once a week. Recipe testing ice cream flavors is one of my family’s favorite things to do at our weekly Sabbath lunch. We’ll try anything when it comes to ice cream, from fruit to candy to dairy-free.
Recipe-testing is fine, but you know what? Sometimes you just want something classic, something comforting, something like a fudge pop…
These fudge pops start with a simple stovetop chocolate pudding made from basic ingredients like cocoa powder and milk (dairy-free, if that’s your preference!). Next, pour the pudding mix in some small paper cups, and add a wooden stick, and you’ve got yourself a batch of fudge pudding pops.

Classic Fudge Pudding Pops
Makes 8-10 pops
Ingredients:
- 2/3 cup sugar
- 1/3 cup cocoa powder
- 1/4 cup cornstarch
- Pinch of salt
- 3 cups milk (dairy or non-dairy)
- 1/2 cup semi-sweet chocolate chips
Instructions:
- In a medium saucepan over medium heat, whisk together the sugar, cocoa powder, cornstarch, and salt.
- Gradually whisk in the milk, and continue whisking until combined.
- Bring the pudding mixture to a boil, and whisk until the pudding has thickened, about 5-6 minutes.
- Remove the saucepan from the heat, and whisk in the chocolate chips until melted.
- Let the pudding cool slightly, about 10 minutes.
- Once the pudding has cooled for 10 minutes, divide the pudding between 8-10 small paper cups*.
- Freeze the pops until slightly frozen, about 1 hour.
- Remove the pops from the freezer, and place a wooden stick in the center of each pop.
- Return to the freezer, and freeze for at least 5 hours.
- Once frozen, remove the paper cup from around the fudge pop, and enjoy!
*Don’t have paper cups? Use popsicle molds instead!
