I have to admit, I had never tried fruit salsa until my mom came home one day from work and told me about a papaya salsa she had tried during a staff lunch. I was pretty confused, fruit…with chips? It just didn’t make sense. I kept thinking about it, trying to understand how tortilla chips and fruit could possible go together.
After tasting this papaya mango salsa we created, I have to say, fruit salsa with chips is really good! It’s a lighter, healthier version than any tomato salsa I’ve ever tasted, and it’s a great way to sneak fruit into your diet.
You can serve this version of chips and salsa at a BBQ or for brunch, and the best part is, you can make it ahead of time and the flavors will be even better. Dice up some papaya, mango, and squeeze in lime juice, and you’ve got yourself a refreshing, healthy appetizer.
Fruit salsa is definitely a must-have for the summer!
Papaya Mango Salsa
serves 3-4
Ingredients:
- 2 cups diced papaya
- 1 cup diced mango
- Juice of 2 limes
- Zest of 1 lime
- 1/4 cup chopped cilantro
- 1-2 tablespoons chopped jalapeño (optional)
- Chips, to serve
Instructions:
- In a large bowl, combine all of the ingredients (except the chips), and stir with a large spoon to combine.
- Cover the bowl, and refrigerate the salsa for at least 1 hour (or overnight) until ready to serve.
- Serve with chips, and enjoy!
