Remember those yummy Danish butter cookies you would eat in school as a child? These are the homemade version, and they are just as delicious. The best part is, you only need six basic ingredients to relive this childhood favorite!
Ingredients:
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 egg white
- 1-1/2 cups, plus 2 tablespoons flour
- Optional: Course sanding sugar, for decoration
Instructions:
Preheat the oven to 375 degrees. Line baking sheets with parchment paper, and set aside.
On medium speed, cream together the butter and sugar with an electric mixer.
Mix in the vanilla and the egg white.
On low, add the flour, and mix until combined.
Roll the dough into quarter-size balls. Place each ball on the lined baking sheet, about 1 inch apart. Using the palm of your hand, gently press down on each ball. If using, sprinkle each cookie with the course sanding sugar.
Bake, rotating pans halfway through, about 13-15 minutes, or until the cookies begin to turn golden in color. Cool completely on a cooling rack, and enjoy!
