Back-to-School Eggs

Back-to-School time is always so exciting!  Kids meeting new friends, new teachers, and learning new things is the best.  As a middle school teacher, I love watching kids come back to school in September.  There’s an air of anticipation and excitement!  For the parents, it’s also a time for running around and making breakfast for their kids…I can appreciate the hustle and bustle for them as well.  Breakfast time is so important for kids and parents, but it’s sometimes to difficult to make a healthy, filling breakfast when you’re in a rush.

Not only are these eggs delicious, but they are super easy and fast to make.  If you have an egg, a microwave, and a few minutes, then you’ve got breakfast…and so do your kids!  Happy Back-to-School, everyone!

Ingredients:

  • 2 whole eggs
  • 1 tablespoon milk
  • Salt and pepper, to taste
Instructions:
  • In a microwave-safe bowl, beat together the eggs, milk, and salt and pepper.
  • Microwave for 2 minutes.  (Depending on the power of your microwave, you may need to add 30 seconds.)
  • Let cool slightly, and enjoy!
