Baked Beans with Pineapple and Brown Sugar

Now that it’s summer, and we’re all in a BBQ’ing mood, I thought I’d share one of my favorite recipes for the perfect BBQ side dish: sweet baked beans. Being grain/gluten free and mostly vegan means I can’t eat a lot of the typical foods found at your weekend barbecue.  That’s why these baked beans are perfect!

They’re hearty and filling, and go great served next to BBQ tofu (just sayin’).  The pineapple chunks add such great flavor and texture, and the brown sugar and maple syrup make ’em perfectly sweet.  I know some of you may be questioning the wisdom of putting pineapple in baked beans. But, trust me, it works.

Baked Beans with Pineapple & Brown Sugar

Serves 6-8

{Vegan, gluten/grain free}

Ingredients:

  • 3 cups ketchup (or tomato sauce)
  • 1 cup water
  • 1 cup brown sugar
  • 1/4 cup maple syrup
  • 3 tablespoons molasses
  • 6 cups cooked pinto beans
  • 1 cup pineapple chunks (fresh or canned)

Instructions:

Preheat the oven to 350°.

Combine all the ingredients except the beans and pineapple chunks in a large pot.  Stir together until the sauce is smooth.  Stir in the cooked pinto beans and pineapple.

Cover the pot, and bake the beans in the oven at 350°, stirring every 20 minutes, for 1 hour.  Let cool slightly, and enjoy!
