Fresh limeade is my all-time favorite summer drink. There’s nothing like the taste of a cold glass of limeade on a hot day. It’s so freshing! It always reminds me of my abuelita (grandmother). She makes the best limeade. No measurements, just mixing flavors together until it’s just right. Yum!! I ask her to make it for me every week when she visits us for the summer.
The other day, JF and I were playing around with flavors, and we came up with this mint-infused limeade club soda drink. It turns out, it’s the same thing as a mojito, without the alcohol, of course. It’s refreshing and easy to make. When I asked JF to describe it, he said it tastes like “an island in a glass.” Who doesn’t want that?!
Ingredients:
- 4 limes, cut into wedges*
- 10 large mint leaves
- 1/2 cup sugar*
- Club soda
- Ice
Instructions:
Squeeze the juice of the lime pieces into a small pitcher. Add in the squeezed lime pieces, mint leaves, and the sugar. Crush the ingredients with a wooden spoon.
Add ice to fill half the pitcher. Add in club soda to fill the rest of the pitcher. Mix all the ingredients together.
Chill and enjoy!
Makes 4 servings.
*Feel free to add more lime juice and sugar, to taste!
