Papaya Lime Smoothie

My kids love smoothies.  They have grown up used to watching us throw fruits, veggies, nuts and powders into a blender and drinking away.  Most days, my youngest isn’t happy until she’s had her smoothie in the morning.  Sometimes she wants yogurt in it, sometimes almond milk.  She likes to play around with different fruit combos, too.

On one such day of experimenting, she pulled out a papaya my mom had bought for us and said she wanted a papaya smoothie.  Then she pulled out a lime.  I tell ya, she’s pretty savvy for a 3 year old, huh?  So, a papaya lime smoothie it was.  She drank the whole thing, and asked for more.

It’s easy to understand why, too.  This papaya lime smoothie is nice and thick, not too sweet (it’s naturally sweetened by the way), and really refreshing.  The great thing about a smoothie is you can add things to suit your taste.  Want it sweeter?  Add more honey or maple syrup.  Want more lime flavor?  Add more lime zest.  You really can’t go wrong.

Papaya Lime Smoothie

Serves 1-2*

Ingredients:

  • 1 large ripe papaya
  • 2 limes, zested and juiced
  • 1/2 cup greek yogurt (use non-dairy for a vegan version)
  • 1/2 cup milk (dairy or non-dairy)
  • 3-4 tablespoons honey or maple syrup

Instructions:

Start by cutting the papaya in half lengthwise with a sharp knife.  Use a spoon to scoop out the seeds from the center of both halves of the papaya.  Discard the seeds. Use the spoon to scoop out the papaya fruit. You will need 1 cup for the smoothie.

Place the 1 cup of papaya pulp in a blender, and add the rest of the ingredients.  Puree in the blender until smooth.  Serve in a glass and garnish with more yogurt, if desired, and enjoy!
