Peanut Butter Trail Mix Granola

Ok, let’s talk about granola, and getting lost.  Have you ever been lost?  I mean really, really lost. Like ‘all forms of technology have failed you and you’ve walked over 14 miles and you’re going to fall if you have to go one more step’ lost.  Yeah, it’s serious.  Let me explain…

It was a beautiful sunny Mother’s Day, and we were walking peacefully through the hiking trails at Antietam, munching away on our oh-so-good trail mix and having a great time enjoying the sights. After walking about 4 miles, we decided to follow the trail map to head back to the visitors center. Turns out, the blurry photocopied map they gave us fused two roads together, so what we thought was the road leading back to the car was really a road leading us heck far out to the middle of nowhere.  It was bad.  I mean really bad.  My little hiking partners (precocious explorers, ages 5 and 3) walked for 4 more miles before almost collapsing from exhaustion.  After carrying them for a few more miles down the road, I decided to leave them with their dad at a local restaurant while I walked another 6 miles to get the car.  After a few hours, we were finally back in the car and on our way home.  But, let me tell you, it’s an adventure we won’t soon forget.

Now, let’s talk about this trail mix.  It’s granola, but really it should be called energy-packed candy bites.  Here’s what it’s got: oats, rice cereal, chocolate chips, dried cranberries, walnuts and dried coconut.  Oh, and did I mention all that goodness is covered in a homemade peanut butter sauce to send this candy, I mean granola, over the top?  Yeah, you need to make this ASAP and keep it around for emergencies.  You know, like getting lost…

Peanut Butter Trail Mix Granola

Serves 4

{Gluten free, Vegan friendly}

Ingredients:

  • 6 tablespoons butter (or non-dairy margarine), cubed
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter
  • 1-1/2 cups oats (gluten free, if needed)
  • 1 cup rice cereal
  • 1 cup chocolate chips (or M&Ms)
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 1/4 cup shredded coconut

Instructions:

To make the sauce, combine the butter, brown sugar and peanut butter in a small saucepan over medium-low heat.  Stir occasionally until smooth and the mixture reaches a boil.  Once it reaches the boiling point, cook for an additional 3 minutes, stirring constantly.  Remove from the heat, and let cool slightly for a few minutes.

In a large bowl, combine the remaining ingredients, mixing them together with a spatula.  Pour the peanut butter sauce over the granola mix, and stir until the granola mix is coated with the peanut butter sauce.

Transfer the granola to a parchment paper-lined rimmed baking sheet, and refrigerate for at least 2 hours (or overnight) before enjoying!
