Valentine’s Day Heart Sandwich Cookies

Valentine’s Day is just around the corner, and I’ve got the perfect cookie for you: two sugar cookies sandwiched together with a thick layer of jam and dusted with powdered sugar.  Other than the simple yumminess of jam-filled sugar cookie sandwiches, there are two very good reasons you should make these for Valentine’s Day:

1.  These sandwich cookies are super easy to make.  All you need is a few rolls of Pillsbury Sugar Cookie Dough and some jam!  Your kids will definitely want to join in the fun (that’s my 3 yr old’s hand in the cookie cutting photo below)!

2.  Sandwich cookies can be customized to make all the special valentines in your life happy.  Play around with different flavors of jam for every one in your family.  I used guava (a family fav) and dulce de leche, but you can use apricot, grape, strawberry or raspberry!  You really can’t go wrong.  After all:

Valentine’s Day Heart Sandwich Cookies

Ingredients:

  • 1 roll Pillsbury refrigerated sugar cookie dough
  • 1/2 cup jam (any flavor)
  • 1/4 cup powdered sugar
  • 2 heart-shaped cookie cutters (different sizes)

Instructions:

  • Preheat the oven to 350° and line a baking sheet with parchment paper.
  • Start by rolling out the refrigerated sugar cookie dough between two sheets of wax paper to form a 1/4-inch thick rectangle.

  • Use the large cookie cutter to cut out 8 large hearts and place four of them on the lined baking sheet.

  • Take the smaller cookie cutter and cut a heart into the four remaining large cookie hearts.  Gently remove the large heart cut-out and place on the cookie sheet, leaving behind the small heart.  This will be the top layer of your sandwich cookie.  {If you find that the dough is too soft to do this step, place the cookie dough back in the refrigerator for 3o minutes until cold enough to work with.}

  • Bake the cookies at 350° for 11-12 minutes, until lightly golden.
  • Cool completely before filling.
  • Once ready to fill, spread about 1 tablespoon of jam on top of one of the large cookies.  Gently press a heart center cookie on top of the jam, creating a sandwich cookie with a heart in the middle.  Repeat with remaining cookies until all sandwiches have been made.  Dust with powdered sugar, and enjoy!
