Pumpkin Mousse

I love Thanksgiving Week!  I love all the menu planning, the cooking, the baking.  I love sitting down to Thanksgiving dinner with my family and eating the same comforting food we have year after year.  It never gets old.  Mashed sweet potatoes with marshmallows (my mami makes them the best!), green beans, mushroom gravy, arroz con gandules (Puerto Rican rice…too good!), and our favorite vegetarian dinner roast.  Absolutely delicious!  And, then, of course, there’s dessert…

There are so many Thanksgiving desserts to choose from!  Pecan pie, chocolate pecan pie, pumpkin pie, pumpkin roll, pumpkin cheesecake, apple pie, and the list goes on and on and on…

Every now and then, though, it’s nice to throw something new into the mix! And, so, here you have it, a great alternative to pie and cake this Thanksgiving: Pumpkin Mousse!

Creamy and oh, so pumpkin-y, this mousse is perfect after any Thanksgiving meal.  Plus, did I mention how easy it is to make this?  This is a no-bake, one-bowl dessert that only takes a few minutes to make.  Give pumpkin pie a break this year for Thanksgiving, and try this Pumpkin Mousse!  And, Happy Thanksgiving to you and your family!

Ingredients

  • 1-1/2 cup milk
  • 1 3.4 oz package Vanilla Pudding mix
  • 1 cup pumpkin puree
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
Instructions
  • In a medium bowl, whisk the milk and the pudding mix together.  Let stand for a few minutes.
  • Mix in the pumpkin puree and the spices until combined.
  • Pour into dishes and refrigerate for at least 4 hours before serving, and enjoy!

  • Wow. That sounds like an amazing feast year after year. This mousse is a great alternative to pumpkin pie… we only eat the filing anyway, right? 😉
