Titi Cynthia’s Family-Friendly Pina Colada

The pina colada has to be the quintessential beachfront, pool-side, summertime drink!  Did you know this delicious drink originated in my home island of Puerto Rico?  The first pina colada ever served was in August of 1954, at the Caribe Hilton Hotel in San Juan, Puerto Rico.  Every time I have a pina colada, I think of Puerto Rico.

Although everyone makes their own version, my favorite is my Titi Cynthia’s Pina Colada.  She has been making these for me for years now, and our yearly summer trips to her house aren’t complete until she’s made us a fresh batch!  It’s so simple to make, and I love the pure fruity-coconut taste that you get from chilling the mix until the flavors come out.  On our recent trip to her house, I asked her to make these for me so I could share it with all of you.  Because she is the coolest aunt in the world, she agreed.  Here is her recipe for the perfect family-friendly Pina Colada!

Ingredients:

  • 46-oz. Pineapple Juice
  • 15-oz. Coco Lopez Cream of Coconut
  • Ice
Instructions:
In a large pitcher, mix the pineapple juice and cream of coconut with a large spoon.  Refrigerate for at least 2 hours, or up to overnight to let the flavors develop.
In a blender, blend about 3 cups of ice.  Add the cold pineapple-coconut mix, and blend until smooth.
Serve immediately, and enjoy!
Makes 12-15 servings.
