Fresh Strawberry Ice Cream

This deliciously creamy ice cream is full of fresh strawberries…a perfect treat for any day of the week.  You’ll want to go pick your own strawberries just to make this ice cream, but, don’t worry, store-bought strawberries will work just as well!

Ingredients:

  • 2 cups half-and-half
  • 1-14 oz. can sweetened condensed milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries
  • Juice of 1 lime

Instructions:

In a large bowl, whisk together the half-and-half, condensed milk, heavy cream, and vanilla extract.  Cover and freeze for about 1 hour, until the mixture is very cold (but not frozen!).

Pour the cold mixture into your ice cream machine, and freeze.

While the ice cream is freezing, in a small bowl, use a fork to mash the strawberries with the lime juice.  (You will still have chunks of strawberries, so don’t worry if the strawberries aren’t completely crushed.)

Once the ice cream has frozen in the machine, pour the mashed strawberries into the ice cream maker, and freeze for an additional 5 minutes, so the strawberries mix in with the ice cream.

Pour the ice cream into a container, and freeze for at least 3 hours before enjoying!

Makes about 1 quart.

    Just found your site and guess what I am fixing tomorrow? Ice Cream! Actually I have a bag of mixed berries left over from a party today and I will mix it up a bit!
